Berringa Honeycomb Popcorn Brittle

Serving size – makes one tray, enough for up to 10 people to share

Prep time – 5 minutes

Cooking time – 10 minutes

Ingredients

1 bag ready-made popcorn, or enough to generously cover a baking tray

200g caster sugar

100g Berringa honey

60ml water

¾ tsp. bi carb soda

Method

Cover a baking tray with baking paper, then sprinkle on top the ready made popcorn.

Place the sugar, Berringa honey and water in a saucepan and bring to a low simmer.

Once the sugar has dissolved bring the heat up to a moderate to high heat and boil until a temperature thermometer reaches 154 degrees Celsius. Please ensure children are supervised during this process as the mixture becomes very hot.


As soon as the mixture reaches the desired temperature take it off the stove and immediately whisk in the bi carb soda until mixed through. Once the bi carb is mixed through pour the mixture over the popcorn and allow to set. Do not move the tray as this will cause the air bubbles in the honeycomb to pop before they set.

Once the mixture has set and completely cooled, crack the honeycomb into pieces and enjoy.
